Ingredients
3 1/2 c wheat bran
1 c kamut flour
1/2 c brown sugar
2 T baking powder
1/2 c ground flax seed
2 t cinnamon
2 c any milk
4 ea large egg
1/2 c honey
6 T olive oil
1/2 c chopped (any) walnuts (optional)
1 c dark chocolate chips
1 c pureed pumpkin

Directions
Combine dry ingredients and add milk, eggs, honey and oil.
Mix until moistened. Add pumpkin (or apple/bananas) to mixture and keep in fridge for a few hours or overnight.
Preheat oven to 425°F, add nuts (optional) and chocolate chips to batter.
Divide evenly into 24 large muffin cups.
Bake for 15 to 17 minutes.
